Sydney Harbour based distillery, Hickson House, has released its new Oyster Shell Gin, which aims to capture the essence of pristine Australian coastline in a bottle. The resulting small-batch gin has a smooth and creamy texture with a hint of salinity and vibrant citrus notes.

Made using Hickson House’s multi award-winning Classic Dry Gin, the savoury spirit uses native Australian ingredients including locally sourced Sydney Rock Oysters.

The salinity is complemented by seaside botanicals and notes of citrus including old man saltbush, seaweed, and tarragon as well as bright citrus notes from native finger lime and ruby grapefruit.

“With a bright citrus and ocean spray aroma, the flavour profile shines with Juniper and citrus, and a delicate saline and subtle minerality. The resulting finish is long, dry and slightly salty, with lingering herbal and mineral notes,” state the company’s tasting notes.

The conception of the premium craft gin follows a heightened demand for artisanal spirits with distinct flavour profiles that unleash an unique experience during consumption.

Hickson House head distiller, Tim Stones, said gin needs to be a sociable and versatile spirit, and gin enthusiasts are looking for a liquid that transports them beyond the bottle.

“Matching flavour profile, intensity and drinking experience to capture a feeling and place is really what we aimed for with the Oyster Shell gin and we wanted to create a sea-to-glass texture and taste,” said Stones.

“Each of the botanicals are selected from seaside locations across Australia to bring to life this hand-crafted spirit, and tell a sensory story of the diversity of flora and fauna that makes our coastline so unique.”

Hickson House Distilling Co landed a distribution partnership with Amber Beverage Group in May, aiming to expand their footprint in the Australian gin market. The collaboration became effective from 1 July, so Oyster Shell Gin will be exclusively distributed by Amber Beverages.

Hickson House co-founder, Mikey Enright, said the new gin reflects the provenance of the brand, housed at the foot of the Harbour Bridge.

“Our small-batch Oyster Shell gin really epitomises the brand ethos of ‘Made of Australia’ by using locally sourced ingredients. With our distillery nestled at the edge of Sydney Harbour, it was important for us when creating the gin to capture the essence of the pristine Australian waters,” said Enright.

“With the briny minerality of the crushed Oyster Shells, each sip of the gin will transport you to one of the best places in the world – our home – the iconic Australian coastline.”
