The results of the 2025 Sydney Royal Cheese & Dairy Produce Show have been announced, celebrating products across the industry. This year had the highest medal rating to date, with over 91 per cent of entries receiving a gold, silver, or bronze medal.

The Sydney Royal Cheese & Dairy Produce Show has traditions dating back to the 1870’s, and is considered one of the most prestigious for the sector. Judged by industry experts, the Show highlights quality, flavour, and craftsmanship of products.

All judges have completed an accredited sensory training course, and each panels of three to five includes a combination of manufacturers and technologists from industry, product users, product retailers, and other specialist judges.

This year’s edition had awards classes in milk, butter and cheeses, including cheddar, labneh and haloumi, gelato, yogurt, buttermilk, custard and other milk products ranging from cows, sheep, goats, buffalo and camels.

According to chair of judges, Tiffany Beer, Australian dairy producers have been focusing on techniques to create better textures and well-balanced flavour profiles.

“This year’s results demonstrate that Australian dairy producers are putting quality first; with many utilising the feedback provided by our judges in 2024 and taking the time to refine their products and make the small tweaks that have delivered incredible outcomes,” said Beer.

“Hard cheeses were a standout class for our judges this year and we saw a huge increase in the quality of white mould cheeses available on the market.

“Now is the time to be curious about non-bovine products and more specifically camel milk products. For the first time, we have a gold-medal Marinated Persian Style Camel Milk Feta on our Perpetual Australian Cheeseboard, which is an impressive feat,” she said.

Another 2025 trend noted by Beer is the development and balance of complex flavours, particularly of Asian and Indian influence.

“Over the last few years, we have seen an increase in flavoured desserts and different flavours in ice cream and gelato such as matcha, green tea and black sesame but what was notable this year was the exploration and maturation of balanced flavour profiles such as Yuzu and sweet potato,” said Beer.
