Tasmanian distillery, Sullivans Cove, has announced the release of its latest limited whisky – 17 year old Old & Rare American Oak Second-Fill TD0107.

Celebrating its 30-year anniversary in 2024, Sullivans Cove also released Australia's oldest whisky earlier this year, the 24-year-old single-cask, HH0004. Now TD0107 is taking the spotlight.

Distilled in June of 2006 and decanted in January of 2024, American Oak Second-Fill matured at 17 years and 5 months old in a single, 200L American oak second-fill cask. Bottled at 47.6%, this cask yielded just 192 bottles, and will be available exclusively through online ballot to Sullivans Cove mailing list subscribers.

The palate initially leads with biscuit, macadamia, and milk chocolate, with peaches and cream, almond apricot, and yoghurt bites adding a fruity and creamy complexity. A touch of dusty oak at the back palate provides balance, while thick and sticky textures pop, creating a rich and indulgent mouthfeel, with a dark, heavy finish.

Sullivans Cove Sensory Team described the whisky: “A soft and gentle entry from nose to palate builds a powerful transition into a dark and heavy finish. The final herbal notes, reminiscent of liquorice all sorts, linger beautifully, adding to the complexity and allure of this remarkable whisky.”

Old & Rare American Oak Second-Fill TD0107 will be available to Sullivans Cove subscribers from 26 August, for $800.
