Pure Dairy has opened its new $100 million dairy manufacturing and processing plant in Dandenong South, Victoria. The facility is 13,000 square metres and is already producing various dairy products for key hospitality and retail buyers – including Coles.

Now fully operational, the facility had its official opening on 23 October, with over 200 guests in attendance. In addition to the manufacturing plant, the facility also houses the headquarters of Pure Dairy’s trade, foodservice and retail divisions.

Pure Dairy founder and chairman, Adrian Josephson, said the new facility has been his vision for nearly a decade.

“In my younger years, I’d be travelling the world, selling Australian cheeses to the largest cheese converters in Europe and the US. Even then, I knew one day I needed to build something like this here in Australia,” said Josephson.

The company has been gearing up for its expansion as the plant was being built, attracting investment from US natural and processed cheese packager, Great Lakes Cheese, in October 2024.

Pure Dairy also made several key appointments in the lead-up, including a new chief commercial officer last November, and new general managers of wholesale/retail sales and corporate sales in March 2025.

The new facility has been in the works for several years, with external construction done by Pellicano, and the internal build undertaken by Paul Brady Group.

Victorian Minister for Industry and Advanced Manufacturing, Colin Brooks, said the facility represents the largest private investment in dairy for the past 40 years.

“The southeast of Melbourne is a broad manufacturing powerhouse. It’s the biggest manufacturing hub in the country,” said Brooks.

“It’s something we should be really, really proud of – Victoria’s manufacturing heartland, right here in the southeastern suburbs of Melbourne – and this project will generate some $89 million of economic activity for the region.”
