Victorian artisan caramel company, Caramelicious, has rolled out three new flavours of its handmade caramel product in Australia.

It has added Vanilla, Cocoa and Cocoa Hazelnut to its current salted butter flavour and has plans for two more – Lavender and Coffee – to be released in the summer.

The family-owned caramel business specialises in authentic French caramel which it says is based on a family recipe passed down through five generations.

Caramelicious was founded in 2011 by Rémi Tremsal, who was born and raised in France. He started out in Australia working as a jockey, but switched to cooking due to back injuries.

“Our caramels are hand-crafted products made in small batches in copper bowls which make possible a gentle and regular cooking,” Tremsal says. “The production requires a particular timing in order to ensure a perfect, smooth and easy paste to spread.”

The company suggests its caramels are used on crêpes, grilled bread, brioches and pancakes; they can also sweeten coffee, yoghurt and decorate deserts.

The range comes in a set of four 110g jars for RRP $24, and are also available individually in 200g, 280g and 1kg quantities. They are available in over 40 retails locations including Leo’s Fine Food supermarkets, delis, crêperies and gourmet specialty shops.
