Gourmet cookie company Byron Bay Cookie Company has collaborated with chef, restaurateur and author, Christine Manfield to create a limited edition cookie.

Their co-created Passionfruit & Dark Chocolate Cookie marks the company's 25th birthday, as well as the beginning of a larger brand ambassadorship, according to Byron Bay Cookie Company.

Manfield travelled to the company's Byron Bay facility to develop the new cookie, which combines a shortbread biscuit base with passionfruit puree and pieces of dark chocolate.

“Passionfruit is a signature ingredient of mine so thought it fitting to use it for this special limited edition cookie.” Manfield said at the launch this week.

“It was great to go and see the energy and collaboration that goes on amongst the whole team there,” she said.

Byron Bay Cookie Company marketing manager Emilie Emond said: “Christine is known as one of Australia’s dessert queens so she was a natural fit for our brand, and we look forward to creating more unique flavours with Christine over the coming months.”

The Passionfruit & Dark Chocolate Cookie launched this week in 200g tins exclusively in David Jones, with plans to roll out the range to some cafes nationwide early next year.

Byron Bay Cookie Company's parent is family-owned Australian pasta company, Rinoldi.
