12-Micron is the impressive new 230-seater restaurant, late-night dessert kitchen, and bar with 270-degree views of the harbour, situated at The Streets of Barangaroo. It is open seven days a week and offers authentic modern Australian cooking in a relaxed and stylish interior.

The 12-Micron name is inspired by the rare and coveted fine 12-micron wool fibre which is refined into some of the worlds’ most beautiful garments. In much the same way, 2-hat executive chef Justin Wise and his team transform their ingredients in the kitchen into a selection of sumptuous dishes.

12-Micron sources predominantly Australian ingredients from a range of producers and a collective of foragers to create a refined but still relaxed menu. The restaurant menu is divided into four parts: earth, ocean, land and air, and the nod to the Australian elements is echoed in all aspects of the restaurant including the interior, where green and blue stone cobbles and tiles evoke the colours of a gum leaf and a rough bark texture is introduced through leathered finished granite and loose fit leather sofas with ruffled detailing.

Justin Wise: “12-Micron is an opportunity for us to create beautiful food with what I consider to be the very best produce at that time. I’ve gone as local as I can find so, apart from a couple of items which we’re still trying to source locally, we proudly use Australian”. Wise and his team, who have quite a bit of fine dining experience, have opted to turn the food and service elements into a more relaxed dining experience at 12-Micron – impressive but not intimidating.

In a quirky move, 12-Micron has added a dedicated dessert bar which is open till late to satisfy every sweet lovers’ fantasy as they indulge in a la carte desserts or a degustation of three, five or seven intricate dessert courses. Thanks to the setting, guests can watch their desserts being created and plated by the pastry chefs before savouring every sweet mouthful.

In addition to the restaurant and dessert kitchen, there is a large bar area which makes the most of the views across the harbour thanks to the floor to ceiling windows. Here, guests can enjoy a bar snack menu as well as a wide selection of drinks, including an impressive range of modern and classic cocktails.

For a more exclusive dining experience, a private dining space will seat up to 20 people. Ideal for both private and corporate gatherings, this space is popular for long lunches as well as for convivial evenings enjoying one of 12-Micron’s exquisite degustation menus, with or without matching wines. The impressive wine list features more than 30 wines by the glass and includes many Australian wines, covering a broad range of tastes and budgets.

And if you are looking for a something a little bigger, 12-Micron now also boasts a brand-new, 300 people dedicated function and event space – The Watermans Room. A relaxed yet sophisticated space suitable for all events from corporate and conference to cocktail and celebration, as well as weddings and bespoke events. Watermans Room is a completely exclusive area with a private bar, private lift access and private bathrooms.

Packaging News

The ACCC has instituted court proceedings against Clorox Australia, owner of GLAD-branded kitchen and garbage bags, over alleged false claims that bags were partly made of recycled 'ocean plastic'.

In news that is disappointing but not surprising given the recent reports on the unfolding Qenos saga, the new owner of Qenos has placed the company into voluntary administration. The closure of the Qenos Botany facility has also been confirmed.

An agreement struck between Cleanaway and Viva Energy will see the two companies undertake a prefeasibility assessment of a circular solution for soft plastics and other hard-to-recycle plastics.
