Four Pillars has released its Barrel Aged Bloody Underhill Shiraz Gin, aged in Yarra Yering Dry Red barrels. A luxury gifting option compared to other releases, Four Pillars said the Yarra Yering Bloody Underhill Shiraz Gin was ‘the next level’.

The gin had an extended barrel ageing process of the fruit from Yarra Yering’s Underhill Vineyard, giving the liquid additional softness on the palette, and vanilla notes from the oak.

When the time was right, the barrels were blended and a small pep of gentian was added before bottling to bring back some bitterness that had dropped out in the barrel.  

Four Pillars said the result was one of the most delicious and complex gins the team has made to date, with equally one of the longest names.

The Barrel Aged Bloody Underhill Shiraz Gin has a higher ABV than the regular Bloody Shiraz Gin (41.8 per cent ABV, 4 per cent higher) and is more developed and complex than previous limited releases.

It retains its usual Amaro character but has more preserved fruit, and slightly more savoury notes than the 2021 and 2022 releases. 

The Barrel Aged Bloody Underhill Shiraz Gin will be the very last of the Yarra Yering Single Vineyard series, and is available online and at Four Pillars for $175.00
