Sullivans Cove Old & Rare French Oak ex-Tawny is back for the first time in four years. The 17 years old, Cask TD0187 is the third French Oak ex-Tawny to be released via ballot since 2021.

Distillery manager, Heather Tillott, said the release was “Refined yet seriously approachable”.

“The lighter tawny profile is perfectly matched with gentle oak, offering layers of sweetness, spice, and savoury intrigue… It’s an absolute pleasure to enjoy,” she said.

The “Old & Rare” was filled in June 2007 and decanted after 17 years and three months in September 2024. The long maturation in the 300 litre French oak cast has yielded 443 bottles at 47% ABV.

“Aside from notes of juicy dark fruits, chocolate, spice, nuts and earthy herbal nuances, these single casks display incredible complexity and length of palate,” Tillott said.

Each bottle comes in a handmade, solid oak presentation box with a letter of authenticity signed by Tillot.

It is RRP $1250 and available via ballot entry at Sullivans Cove website. Ballot closes 29 January.
