The handcrafted UK spirit Silent Pool Gin has launched in Australia. Founders Ian McColluch and James Shelbourne said the gin was inspired from the myth and folklore that surround the atmospheric lake Silent Pool. 

Silent Pool is made using 24 botanicals and has an ABV of 43 per cent. The distillery uses a four-stage distillation process to control the quality and flavour of each batch. This process involves the core botanicals of juniper, coriander and cardamon to be steeped and macerated in alcohol to extract as much flavour.

The distillation team then use their “Gin Tea Infusion” process. Delicate floral ingredients such as chamomile, rose and elderflower are soaked separately in high proof spirits in what is essentially a giant tea bag. After 24 hours, the mixture is strained and added to the still. 

To bring out the brighter top notes of citrus and the Macedonian juniper, the distillation is then passed through a basket infusion. In the final stage, the spirit is refined in aroma and taste using a rectifying column.
