Saputo Dairy Australia (SDA) has launched its new Individually Quick Frozen (IQF) shredded mozzarella, under the Fred Walker brand, aiming to support food service outlets with Australian-made products.

The IQF process snap-freezes each individual piece of high-quality freshly made mozzarella in just three minutes, before the product is packed and stored frozen until it’s ready for use. This approach locks in taste and texture while offering flexibility and convenience for customers.

The company stated IQF ensures consistent quality and reliable sourcing. With a 365-day frozen shelf life and the ability to use it straight from the freezer or thawed, the product helps to streamline back of house operations, and manage business demand fluctuations with greater efficiency and less waste.

SDA marketing & food service general manager, Zoey Saunders, said the product is a direct response to what our customers have been asking for – a high-quality, Australian-made mozzarella that’s easy to use and store.

“We’ve tested it extensively, including directly with customers through in-store cook ups, and the feedback has been overwhelmingly positive. It performs beautifully in both gas and woodfire ovens, whether used frozen or thawed,” said Saunders.

“This was a true team effort. Every part of our business played an important role in bringing this innovative product to life. We’re incredibly proud of what we’ve achieved together.”

The company stated launch of the Fred Walker IQF mozzarella follows years of cross-functional collaboration within SDA. This included product development and shelf-life studies, commissioning a new designated production line, factory trials through to full scale production and rolling out the product to market.

Fred Walker IQF mozzarella is now available through foodservice providers across Australia.
