As Australians wait for the Polly Waffle to make its way back onto shelves, Polly’s Gin is set to launch later this month as a “grown up and deconstructed Polly Waffle-esque gin”.

The Gin Birds has worked Victorian-based distillery That Spirited Lot to create Polly’s Gin – “a deconstructed ode to an iconic Aussie chocolate bar,” The Gin Birds’ Chamaine Lovett said.

“To bring back the iconic childhood chocolate bar into Australia's favourite spirit, the team has blended old and new and dipped into the northern African history of the marshmallow to allow them the complexity they were after, while also bringing in Australian botanicals that make up the distinctive Polly Waffle flavour,” said Lovett.

Polly’s Gin uses organic juniper and coriander in its gin, while combining marshmallow root, ruby grapefruit peel, lemon peel, almond, pistachio and Ceylon vanilla. To add the flavour of chocolate and wafer, dried orchard fruits, coconut, allspice and cacao are also infused in the drink.

Polly’s Gin also features a purple label as a nod to the Aussie chocolate bar.

The drink will be available online from The Gin Birds in October.
