Tasmanian whisky company, Lark Distillery, has released a new luxury portfolio of four single malt expressions to its permanent lineup, with redesigned packaging for a bold visual identity.
Three expressions – Fire Trail, Devil’s Storm and Ruby Abyss – will lead the release, with a fourth expression, Cinder Forest, available exclusively at key international airports.
Lark director and CEO, Stuart Gregor, who took over the position on 1 January, said the company is thrilled to be bringing these new whiskies out into the world.
“We’re whisky fanatics at heart, driven by the people we work with, the place we come from, and a pioneering spirit that keeps us pushing forward. It really is whisky from another world, and you can taste Tasmania in every drop,” said Gregor.
“Tasmania stands among the world’s most incredible and unique whisky-making regions and we are so very lucky to call it home. Combine where we are from, with the best fortified barrels in the world, thanks to Seppeltsfield and we have a range of whiskies like no other on the planet.”
Lark describes its house style as ‘unmistakably Tasmanian: fortified depth, layered richness and a silky, lingering complexity’.
Locally grown Tasmanian barley, malted in Devonport, produces a lower-yield spirit with greater oiliness, weight and texture. A seven-day fermentation using small-batch brewers’ yeast, combined with exposure to Tasmania’s ambient air, allows wild yeast inoculation to subtly shape flavour and complexity. Maturation takes place in some of Australia’s finest and oldest fortified wine casks from Seppeltsfield Wines in the Barossa Valley to impart depth and character.
Tasmanian peat, sourced from Browns Marsh in the Central Highlands, contributes a gentle, earthy smoke unique to Lark. The distillery remains the only producer in the Southern Hemisphere with its own peat-mining licence. The spirit is cut using apple-wood smoked water from Tasmania’s famed orchards, an innovative technique that enhances balance, complexity and the distinctive umami signature that defines Lark whisky.
Lark master distiller, Chris Thomson, said taste is the company’s compass.
“Being New World means we’re not bound by historical rules. That freedom allows us to release whiskies only when they truly sing,” said Thomson.
“We taste every spirit up to 70 times before bottling, ensuring each glass expresses the true essence of Tasmania, its community, climate and terroir.”
The four expressions in Lark’s new permanent portfolio include:
- Fire Trail (RRP $170) – an enticing single malt, vibrant citrus and baked fruit meet the depth of port and sherry casks, balanced by the subtle savoury note of apple-wood smoked water. Unpeated.
- Devil’s Storm (RRP $200) – a luxury and bold single malt aged in vintage first-fill port and sherry casks from Seppeltsfield and finished in American Oak, revealing scorched red fruit, almond fudge and rich chocolate. Lightly peated.
- Ruby Abyss (RRP $400) – the first release in the Lark Super Luxury range, Ruby Abyss is a deeply complex single malt aged in 100% first-fill vintage Seppeltsfield port (Tawny) and sherry (Apera) casks, some that have been filled with fortified wine for more than a century.
- Cinder Forest (Available from May 2026 through Global Travel Retail, RRP $160) – a rich and harmonious single malt, shaped by first-fill port and sherry casks, with a rich American Oak finish. Sweet vanilla and honey unfurl, while a citrus mist lifts, revealing layers of chocolate and spiced dates.
Lark’s new luxury range launched in Southeast Asia earlier this year and is now available online at larkdistillery.com and at Lark venues in Hobart. The new range will be rolled out through premium bars, select retail partners, e-commerce platforms and Global Travel Retail, over the next few months of 2026, and Europe towards the end of the year.
