Tasmanian whisky distillery, Lark, has launched King Island Rain, the fifth edition to its Wilderness collection, inspired by the untamed beauty of the state.

The upcoming single cask release of just 307 bottles is a tribute to King Island, a rugged outpost off Tasmania’s north coast where the Roaring Forties sweep across the vast Southern Ocean, bringing with them some of the cleanest air and purest rainfall on Earth.

In collaboration with Cloud Juice, Lark harnessed this low-mineral rainwater, renowned for being the softest in the world, and marrying it with the refined depth of Cask #LD2539, a rare American bourbon cask. The result is a whisky of remarkable texture: silky and rich, balancing complexity with velvety softness.

Lark master distiller, Chris Thomson, said the Sky Chapter pays tribute to the ethereal forces that shape our spirit.

“From wind and rain to pressure and patience, Sky captures the invisible yet powerful elements that define Tasmania’s climate and shape our whisky in unforgettable ways,” said Thomson.

On the nose you can expect sweet crème anglaise weaves through delicate notes of guava and lychee, with a freshness reminiscent of dew on citrus leaves. The palate is silky and rich, unfolding in layers of baked peach, spiced pear compote, and a whisper of fennel seed for depth.

A long, graceful finish lingers with toasted brioche, white chocolate sauce, and zesty nectarine – an echo of the island’s wild beauty, shaped by untouched skies, pure rain, and the raw beauty of Tasmania’s most remote landscapes.

King Island Rain is now available exclusively through larkdistillery.com and at Lark’s Hobart venues for RRP $650, with only 307 bottles available.
