Lark Distilling Co. has released its 2025 Christmas Cask, a tradition now in its seventh year combining Tasmanian artistry and local culinary creativity for a festive finish to the year.

Matured in Port and Sherry casks, then finished in Frogmore Creek’s red wine barrels infused with Jean Pascal Bakery’s Fruit Mince Pie jus, the Christmas Cask is a layered and inviting pour with aromas of rhubarb pie, Christmas pudding, and mulled wine spice.

On the palate, notes of caramel and coconut lead into gingerbread and marzipan, finishing long with fruit mince pie, cinnamon buns and frosted orange cupcakes. Each bottle is housed in a bespoke gift box, featuring an illustration of Lark’s Pontville distillery with native botanicals in its windows.

The company stated online that this year's Christmas Cask Limited Release captures the spirit of togetherness, tradition, and the magic of Christmas in every sip.

“Moments gathered around the table, glasses raised in good company, the joy of sharing something truly special – this is what Christmas Cask was made for,” stated Lark.

The 2025 Christmas Cask is now available online at larkdistillery.com.au in a 500mL bottle for RRP $250, or in a 100ml Christmas Cask Gift Pack with a glencairn, for $80.00.
