Never Never Distilling Co are declaring summer as the season of ‘The Shelly’, a re-imagining of the Australian ‘shoey’ tradition, involving a shucked oyster shell and Never Never’s new gin release: Oyster Shell Gin.

Inspired by the Australian coastline, Oyster Shell Gin uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint designed for contemporary seafood pairings.

Oyster shell as the key ingredient gives minerality and a sea spray taste to the gin, supported by other coastal ingredients such as Geraldton wax, salt bush and Tasmanian wakame. Pacific oysters sourced locally from Kangaroo Island were used in the production of the Oyster Shell Gin, with only a few dozen shells required for the subtle flavour that is required in the overall production run.

Never Never instructs trying ‘The Shelly’, by pouring ice cold or frozen Oyster Shell Gin into a freshly consumed oyster shell.
