After seven years in the making, The Craft & Co has released a limited drop of 500 bottles of Solera Aged Whisky (Cask Strength) to the public. 

Known for its award-winning spirits, wines and beers since opening its doors in Collingwood in 2015, The Craft & Co’s founder and lead distiller Paul Baggio said the release was an invitation to take part in a special local artisanal distilling history event. 

“Our distilling team have toiled over this batch since we first opened our doors, and to now release this spectacular cask-strength Solera Aged Whisky for everyone will become a new benchmark in the local craft spirits scene,” said Baggio.

The official tasting notes describe the Solera Aged Whisky as a subtle range of dark and light malted grains are double pot distilled, then matured in selected small charred Oloroso sherry casks and a range of specialty cherry and acacia vats. The small batch selection provides a whisky that is complex in aromatics of pecan, ripe banana and heavily toasted coffee rinds. The palate similarly delivers hints of stewed quince, burnt orange and dried raisins, all balanced by a finish of toffee and toasted mocha.

The Craft & Co’s Solera Aged Whisky is made locally in Melbourne with an alc/vol of 56 per cent, and is available online for RRP $158.00.
