Tasmanian distillery, Callington Mill, has unveiled a limited release batch of Australia’s first Amphora Single Malt Whisky, created using a 4000-year-old technique, once used to rest and transport wine. With less than 1000 bottles available, the release will be only via ballot.

Crafted at the Oatlands, Tasmania distillery, the Amphora Single Malt Whisky is rested in 350-litre amphorae for two years in the distillery’s ambient ‘Serendipity Room’. Here is where the natural properties of the amphora work to gently refine the whisky, the catalyst for its smoothness and purity.

Callington Mill distiller, Blair Whitehead, said the team made sure to pick a liquid worth the wait when the amphora process started two years ago.

“It’s about letting the spirit speak for itself and seeing what character starts to shine through when you treat it with this kind of care,” said Whitehead.

“The idea for our Amphora Single Malt came about naturally, really. We’re always exploring ways to honour tradition while pushing things forward. Amphorae have been used for thousands of years to soften and mature wines and spirits, so we thought – why not apply that same thinking to our already expressive whiskies?”

This fully matured single malt whisky begins its journey in a blend of sherry, tokay, and brandy casks, before making its signature transition into the amphorae—a final step that defines the whisky’s profile. This process which is rarely seen in whisky production gently removes volatiles and impurities for a robust 46% ABV whisky.

Callington Mill invested in three 350-litre amphorae for this distinct resting process, allowing for up to 50 per cent more evaporation than traditional oak casks loss in evaporation (known as the Angel’s Share) and in turn a scarce dram.

Callington Mill stated its foray into amphora signals a continued effort to drive a new era in Tasmanian whisky through innovation while staying grounded in craftsmanship and paying homage to tried techniques.

The Callington Mill Amphora Single Malt Whisky ballot opened on 15 July exclusively at callingtonmilldistillery.com. Ballot winners will be drawn from 11-13 August. Less than 1000 bottles will be released and retail at $199.
