South Australian winery, Bird in Hand, has expanded its new Tasmanian Series, with the release of the 2025 Tasmanian Nouveau Pinot Noir. The company stated the wine captures the purity, structure and elegance of cool-climate Pinot Noir.

Crafted from fruit grown on the western side of the Tamar River near Rowella, the wine reflects the distinct character of the maritime site. The 2025 Tasmanian Nouveau Pinot Noir is a bright, ruby-red expression bursting with aromas of red currants, raspberries, citrus blossom, rose petal and a touch of white pepper. The palate mirrors these notes with flavours of red currants and tangy cranberries layered with lively acidity and smooth, supple tannins.

Bird in Hand senior winemaker, Sarah Burvill, said the wine is vibrant and finely balanced.

“Expressive of the Tamar Valley’s cool-climate terroir, this wine reveals a youthful red-berry purity and freshness that reflect both place and season,” said Burvill.

“Moving into the warmer months, this wine can be slightly chilled and will pair beautifully with grilled salmon and mushroom risotto.”

The release also shines a light on the Davies’ Waxflower (Phebalium daviesii), a Tasmanian species listed as Critically Endangered, with fewer than 30 individuals remaining in the wild. The wine’s label draws inspiration from the Davies’ Waxflower, raising awareness for its conservation.

Threatened by floods, fire and disease, its survival is under serious risk. To help secure its future, Bird in Hand’s Seymour estate is establishing a dedicated seed orchard, providing a long-term, reliable source of seed for ongoing conservation efforts.

The initiative forms part of the winery’s wider sustainability program, which spans organic vineyard practices, biodiversity regeneration, renewable energy and waste management initiatives, ensuring every step of Bird in Hand’s winemaking honours the land it is rooted in.
