Mettler Toledo has released a downloadable 'expert package' which reveals how fast and accurate moisture analysis works.

The measurement and precision instruments supplier claims its methods help many cookie manufacturers achieve a 'signature crunch'.

The free 'Moisture in Cookies' package shares the journey towards cookie quality, covering ways manufacturers can avoid overpaying for raw materials, and how lean manufacturing is supported.

Mettler Toledo halogen moisture analysers perform the same analysis as the drying oven reference method (ICC Method 110/1 and AACC Method 44-1.02).

However, moisture analysers typically require less than 10 minutes compared to two to four hours with the drying oven.

This time gain improves the manufacturer's ability to accurately control the moisture content throughout the baking process, with a positive impact on quality of crispness and consistency, as well as profits.
