An innovative cocktail bar offering a purely plant-based menu, including both food and drinks, has just opened inside the Ovolo Hotel in Sydney's Woolloomooloo.

 

The new bar, Alibi, offers a menu curated by well-known US plant-based chef, restaurateur and global plant-based dining pioneer Matthew Kenney.

Kenney's menu takes locally-sourced plant-based ingredients and presents them in exciting and innovative ways. It also makes use of various procedures such as smoking, fermentation and several molecular techniques.

Although some spirits have non-vegan elements, the bar team aims to keep the beverages as plant-based as possible by using, for example, plant-based egg-white substitutes like aquafaba.

 

“The spirit of the menu is very global to show the potential of plant-based food. We have dishes influenced by many cultures,” Kenney said.

 

The opening of the bar reflects the move of the plant-based diet trend into the mainstream, and its growing recognition as a way of life, as distinct from fad dieting.

 

Although there are plenty of plant-based cafés around Sydney, vegan dining tends to be restricted to daytime hours. Alibi, in contrast, seeks to offer vegan, vegetarian and health-conscious individuals with an evening option.
