Dr John Spink of the Food Fraud Initiative at Michigan State University says when it comes to the types of risks facing the food industry, much of the academic attention has turned to fraud.

Dr Spink, a pioneer in food fraud initiatives, was the keynote speaker at the Australian HACCP Conference on food safety which kicked off today.

During his presentation, he outlined in detail the steps that food and beverage companies could take to better manage their vulnerability to this potential problem.

The theme of the conference, which runs today and tomorrow in Sydney, is Creating Trust & Transparency in the Global Food Industry.

Other speakers include Craig Reucassel from ABC’s The Chaser and War on Waste, Kylie Johnston, the assistant director of the Australian Competition & Consumer Commission (ACCC).

 

Andrea Currie, brand manager, policy and technical standards at Coles, and Alex Holt, general manager, product quality, health and sustainability at Woolworths will also be presenting.
