Swiss chocolate and cocoa products manufacturer Barry Callebaut says it has created a fourth type of chocolate, adding to existing dark, milk and white chocolate types.

 

The company has called the new pink chocolate Ruby, and it is made from the Ruby cocoa bean.

 

According to its maker, it is crated through a unique processing method that unlocks the flavour and colour tone naturally present in the Ruby bean.

 

No berries, berry flavour or colour is added, according to Barry Callebaut, and its creation comes 80 years after the launch of white chocolate as the third type after dark and milk, the company says.

 

Ruby chocolate was created in the company's global R&D centres in France and Belgium.

 

Barry Callebaut’s Chief Innovation & Quality Officer Peter Boone said: “We’re looking forward to working with our partners on introducing this innovative breakthrough to the market and making the new Ruby chocolate category available to chocolate manufacturers and consumers around the world as the fourth reference next to Dark, Milk and White chocolate.”
