Adelaide Hills Distillery has launched a pink craft gin using native Australian and European ingredients.

The 78 Degrees Sunset Gin contains flavours of Strawberry Gum, Bush Apple, Juniper and Rosella, including fresh red berries with hints of pine and eucalyptus, the company says.

The ingredients have been designed to display pink and purple hues seen in unique Australian sunsets.

Distillery co-founder Tobias Kline said the decision to make craft pink gin was due to a growing demand for high-quality daytime gin options.

A 78-degree distillation process which involves individually vaporising each ingredient to achieve consistency means the gin is like rose wine rather than juniper-heavy, Kline says.

The 700ml bottles have an RRP of $74.99.

Consolidation at the top, restructuring in the middle, and bold innovation at the edges have reshaped the industry’s horizons. At the same time, regulators, brand owners and recyclers have inched closer to a new circular operating model, even as policy clarity remains elusive.

Pact has reported a decline in revenue and earnings for the first five months of FY26, citing subdued market demand, as chair Raphael Geminder pursues settlement of the long-running TIC earn-out dispute.
