This spring, Patisserie Wines is expanding its collection through its collaboration with renowned Australian patissier and founder of Cakeboi, Reece Hignell, launching a new wine inspired by one of his signature creations – the Raspberry Lamington.
Drawing on the charm and elegance of a French patisserie, Patisserie was launched in 2025 to reimagine the wine experience through flavours inspired by beloved desserts and sweet treats.
The new Patisserie Raspberry Lamington Rose continues that approach, partnering with Cakeboi to transform one of his most celebrated creations into a vibrant sparkling rose that captures the flavour and character of an iconic Australian dessert.
Created by Hignell and the Patisserie winemaking team, the Sparkling Rose has been designed to capture the essence of Cakeboi's Raspberry Lamington.
Bright raspberry flavours are layered with hints of coconut and vanilla, while a delicate frizzante finish adds a gentle sparkle and texture reminiscent of a freshly baked sponge.
“Patisserie, since launch, has been a fun flavour journey for all involved,’ said Ross Marshall, managing director at Fourth Wave Wine.
“In seeking enjoyment and deliciousness above all, working with Reece was a wonderful chance to take the decadent drinks experience even further. Turning one of Australia’s most loved cakes – and a signature Cakeboi creation – into a sparkling wine will be a great addition to the Patisserie range.”
For Reece Hignell, founder of Cakeboi, the collaboration provided an opportunity to bring his best-known creations into a new category.
“The Raspberry Lamington has been one of my favourite signature cakes ever since I used to make it with my Nan, so the opportunity to bring it to life in a completely different way was incredibly exciting,” Hignell said.
“I’ve worked closely with the Patisserie Wines team from the start, hands on in each stage of development ensuring the flavours people know and love like the bright raspberry jelly, hints of coconut and vanilla are captured in the wine. It's fun, nostalgic and unlike anything I've tasted before.”
Remaining true to Patisserie's playful approach to flavour, the Raspberry Lamington Rose is the latest addition to a growing collection of wines inspired by beloved desserts.
From long lunches and celebrations to casual catch-ups with friends, the new release offers a playful conversation starter that reimagines a familiar favourite in a distinctly Patisserie way.
