Inspired by the culture of Mexico, Four Pillars and Afloat Melbourne have launched the annual Afloat Pink Gin collaboration, featuring habanero chillies, Mexican oregano, and agave nectar.

Each year Afloat Melbourne create a new bar theme to see out the summer, and the Four Pillars team accordingly create a theme-based pink gin.

This year’s gin needed to capture Mexico, so some heavy flavour hitters were in order, including habanero chillies for warmth, Mexican oregano a savoury addition, and agave nectar for a touch of sweetness. The addition of finger limes and dried bitter orange peel helped to balance to finish with a citrusy zing.

The label, inspired by Mexican wrestling — or more locally, Lucha Libre — is as colourful as the gin.

Four Pillars co-founder and fistiller, Cameron Mackenzie said the goal with the release was to bring the unique flavour of Mexico to Aussie gin.

“We’re really happy with the result, with this pink gin balancing the savoury notes from Mexican oregano with the freshness of local botanicals. But make no mistake, the gin packs a punch,” said Mackenzie.

The 2024 Afloat Pink Gin is available for RRP: $85.00 at Four Pillars.
