Australian specialty poultry producer, Aurum Poultry Co., has teamed up with Melbourne's charcuterie artisans, City Larder, to introduce three gourmet Aurum Fine Food products to market.

The collaboration showcases Aurum Poultry Co.’s signature Fook Wong Cockerel – a young rooster chicken, slow grown for 100 days on Aurum’s collective of Victorian collaborator farms – bringing gourmet flair, exceptional quality, unique flavours and convenience to home dining.

City Larder head charcutier, Robbie Bell, said working with Aurum Poultry is a real joy, and the quality of its slow-grown Fook Wong Cockerel is fantastic.

“We love using the whole bird, from premium cuts like the breast to byproducts like the livers and feet. When the produce is this good, it’s all about letting the natural flavours speak for themselves,” said Bell.

The new Aurum Fine Food products will include:

  • Cockerel Liver Pâté – 100g jar ($10.90) & 1.4kg log (wholesale price available) – A creamy pâté flavoured with ginger and garlic
  • Cockerel, Moorabool Valley Corn-Fed Duck and Chive Terrine – 150g sliced ($12.90) & 1.4kg log (wholesale price available) – A richly textured terrine, lightly seasoned, and individually sliced
  • Cockerel Double Stock – 500mL ($8.90) & 1L ($15.90) – A robust, deeply flavoured stock, slow cooked for nine hours, without any additives, preservative or colours added

Aurum Poultry Co. general manager, John King, said the team was incredibly excited to partner with City Larder to showcase the best of its slow-grown Fook Wong cockerel.

“City Larder’s expertise in charcuterie has brought a new dimension to our products, turning every part of the bird into something extraordinary,’ said King.
