Australia’s spirits landscape is being shaken up by Breaking Barrels, the first brand to hit the market from Everstill Spirits – a portfolio built to challenge traditional conventions around spirit ageing and how they’re defined.
Matured in just 30 days using proprietary Steel Barrel Technology, Breaking Barrels delivers the depth and character of aged whisky without the wait.
With no added colours or flavours, and free from outdated rules, it redefines what a modern dark spirit can be, existing outside regulations that require two years in barrel to be called whisky.
“Until now, delivering this level of quality meant long ageing times and higher costs that pushed up price. With Breaking Barrels, we remove the wait and deliver the same depth and smoothness at a far more accessible price point,” said Luis Senra, CEO of Everstill.
“Breaking Barrels is distilled using traditional methods, just like most dark spirits, but it’s the maturation that sets it apart. Using Steel Barrel Technology, we recreate the key conditions of barrel ageing – temperature, pressure, and real oak interaction. The difference is, instead of putting the spirit in the barrel, we put the barrel in the spirit.
“It also unlocks endless innovation possibilities, like the ability to explore different wood types and flavour influences that would be impossible using wooden barrels.”
Breaking Barrels is bold yet refined, offering layers of vanilla, caramel and spice wrapped in an exceptionally smooth mouthfeel. It's approachable for new drinkers, yet complex enough for any seasoned whisky fan.
Additional Everstill products are set to be released in the coming months, including Canesnap Dark Cane Spirit and Golden Hour Aged Vodka, each showcasing how Steel Barrel Technology can be applied across categories to create distinctive, modern spirits.
Available in 200ml and 700ml bottles, Breaking Barrels is now available across Australia.
